Protein Chocolate Chip Cookies

Makes 6 cookies.

What ingredients do we need?

  • 80 gr. oat flour
  • 62 gr. coconut oil (liquid)
  • 30 gr. erythritol/monk fruit
  • 1 egg
  • 1 tbsp. and ½ vanilla
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 25 gr. from our Andean Protein blend
  • 50 gr. dark chocolate chips / Nura Cacao Nibs


  • 🌿 Mix the coconut oil with the sweeteners and add the egg.
  • 🌿 Add the dry ingredients all at once and mix them until you get a wet dough.
  • 🌿 Add the vanilla essence and then the chocolate chips.
  • 🌿 Refrigerate for 15 to 20 min. until the dough reaches a workable consistency.
  • 🌿 Form 50 gr cookie balls. approx. and place them on a silpat or parchment paper plate. Flatten them slightly to give them a cookie shape.
  • 🌿 Preheat the oven to 180° and then bake the cookies for 18 min. at 175°
  • 🌿 Remove the plate from the oven and let the cookies cool on the plate.
